Garlic Aioli with Steamed Artichokes
You’re probably thinking “artichokes for kids, really?!” Yes! Kids have fun tearing the leaves apart and getting to use their hands to eat, and a nice aioli to dip certainly helps.

3 large artichokes
1 cup plain dairy-free Greek-style yogurt (such as Kite Hill)
2 teaspoons fresh lemon juice
1 clove garlic
3/4 teaspoon dried dill
Pinch salt
Pinch ground black pepper
Instructions
- Fill a large stockpot with lightly salted water and bring to a boil. Add the artichokes and reduce heat to low.
- Simmer, covered, for about 20 to 30 minutes or until you can easily pull out a leaf from the center of an artichoke.
- Blend the remaining ingredients in a high-speed blender for 30 seconds to create garlic aioli. Transfer to a small bowl.
- Serve artichokes with garlic aioli for dipping.
Notes
If you cannot find dairy-free yogurt in a Greek style, regular dairy-free yogurt will do. The aioli may be a tad thinner.
