Greek Garbanzo Salad

Entree salads are not always easy for kids, but this one is worth a try. Keep the ingredients separate and encourage kids to build their own bowl. Give them to power! Serve it with some pita bread to round out the meal.

Ingredients

1 head romaine lettuce, chopped

Two 15-ounce cans garbanzo beans, drained and rinsed

3 celery stalks, chopped 

2 tomatos, diced

3 tablespoons parsley, chopped

2 tablespoons mint, chopped

1/2 cup olives, pitted and sliced

3 scallions, minced

3 cloves garlic, minced

2 lemons, juiced 

1/2 cup extra-virgin olive oil

Pinch sea salt

Pinch ground black pepper

1/2 cup vegan feta cheese, crumbled (optional)

Instructions

  1. Add ingredients to individual bowls.
  2. Combine Lemon juice, olive oil, salt, and pepper to make a simple dressing.
  3. Build your own salad and top with dressing.
