Pineapple Mango Salsa
If kids aren’t excited about eating vegetables, adding fruit can help! This Pineapple Mango Salsa is high in antioxidants and vitamin C, which can help picky kids meet their requirements. While chips are salsa are always a great combination, this is also a delicious addition to taco night.

Ingredients

2 cups diced fresh pineapple
2 cups diced fresh mango
1 cup diced red bell pepper
1/4 cup fresh cilantro leaves, chopped
1/4 cup fresh lime juice
Pinch cayenne pepper (optional)
Pinch ground cumin
Pinch sea salt
1 jalapeno, seeded and diced (optional)
One 16-ounce bag tortilla chips, for dipping
Instructions
- Add all of the ingredients, except tortilla chips, to a mixing bowl and gently stir to combine well.
- Serve with the tortilla chips.
Notes
Blue corn tortilla chips are another way to get kids excited about this recipe.
