Sour Cream Sauce

Ingredients

  • 1 cup raw cashews, soaked 1 hour
  • 1/2 cup filtered water
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons apple cider vinegar
  • 3/4 teaspoon sea salt

Instructions

  1. Blend all ingredients in a high-speed blender for about 30 seconds until very smooth and creamy. If need be, scrape down the sides of the blender carafe with a spatula and blend again. Cover and store in the refrigerator.
