Sour “Cream” Sauce
Going dairy-free doesn’t mean missing out on your favorite toppings. While dairy-free sour cream is available in many stores, this version comes together so easily and you may already have all the ingredients. Taco night just got saved!

Ingredients

1 cup raw cashews, soaked 1 hour
1/2 cup filtered water
1/4 cup extra-virgin olive oil
2 tablespoons fresh lemon juice
2 teaspoons apple cider vinegar
3/4 teaspoon sea salt
Instructions
Blend all ingredients in a high-speed blender for about 30 seconds until very smooth and creamy. If need be, scrape down the sides of the blender carafe with a spatula and blend again. Cover and store in the refrigerator.
