Sunflower Butter Cookie Bites
If your child is in a traditional school, there’s a high chance they can’t bring anything in with nuts. Sunflower butter is perfect for these situations, as well as including folks with various allergies. These cookies don’t have dairy, peanuts, tree nuts, or gluten, but are still huge on flavor.
Ingredients

1 cup oats (certified gluten-free if needed)
1/2 cup sunflower seed butter
1/3 cup maple syrup
1/3 cup organic virgin coconut oil
1/2 teaspoon ground vanilla bean
1/2 teaspoon sea salt
Instructions
- Add the oats to a food processor and grind into a nice, coarse, slightly mealy texture—not a fine powder—about 10 seconds or so.
- Add the sunflower seed butter, maple syrup, coconut oil, ground vanilla, and salt to the food processor. Process about 20 seconds, until the dough easily balls together in your hands.
- Form cookies of your preferred size and shape and refrigerate overnight. Or, if you can’t wait that long, freeze them for an hour and then enjoy.
